1 baked 9 inch pie
1/4 c sugar
Dash salt
3 tbsp cornstarch
1 1/2 c milk
2 egg yolks
1/2 tsp vanilla
1 1/2 oz coconut
1/2 pt whipping cream
Combine sugar, salt, cornstarch and milk in saucepan. Cool until thickened. Remove from heat. Add slightly beaten egg yolk to mixture. Cook for 2 minutes. Remove from heat. Add coconut and vanilla. COol. When the pudding has cooled, whip cream. Add 1/2 of the whipped cream to pudding. Pour in blender and blend on high for 2 minutes. Pour into baked pie crust. Put rest of whipped cream on top of pie. Refrigerate until serving itme.
